Prophets have been sent through time by God to convey His message to mankind. The mission of the Prophets was to call people towards this message and inform them about the consequences of accepting and rejecting it. The revealed Divine law was also personified in the personalities of all prophets as a living example for mankind to take heed and follow.
What Jesus means by saying "Be like me" meant to follow his example in fulfilling the commandments of God like he did. Similar is a verse of the Quran which talks about the Prophet Muhammad: 
Verily in the messenger of Allah ye have a good example for him who look unto Allah and the Last Day, and remember Allah much. (33:21)
This likewise means that to be successful in the sight of God we should follow the ways of the Prophet, for in Prophets we find the best examples by learning from the way they executed the Will of God.
I agree with you that we all hold responsibility to the welfare of our follow human beings and that we shall be answerable before God if we withhold our duties and responsibilities.
Regarding Prophethood Quran tells us that it can only be bestowed by God Almighty, it is not something that can be attained. God chooses who He wills as His prophet according to His own Divine plan and Wisdom. As far as I know even the Bible talks about God Himself appointing and raising prophets (Jeremiah 1:5, Deuteronomy 18:18) and also warns of false prophets to whom God had not revealed yet they prophesied (Jeremiah 23:1-32).
