Use of Alcohol in Cooking

Question:
The other day we were at a dinner when one guest declined a certain dish because wine had been used during its cooking. A debate followed in which some people were of the view that as the amount of wine used was very small anyway, and its intoxicant effects have been removed by cooking, it should be acceptible for eating. Others maintained that what is disllowed is disallowed. I would appreciate your comments about such issues.
